I had to get a picture of this before I ate the whole thing and forgot how I made it. I wanted to duplicate an omelette I recently had at Crackers called the Greek. I made this P2 style and it tasted amazing!
This started out as one of my usual omelette/frittatas. I saute onions in my usual coconut oil and when they start to turn translucent I add my spinach let that wilt down and I also added 2 veggie sausages, a few dashes of oregano, garlic, salt and then a half cup of egg beaters. Cover it and let it sit on low heat for about 3 minutes. I then added herb feta cheese about a half ounce containing 25 calories. That cheese makes it taste like you are not on a diet.
