Fried Zucchini HCG Style

Love Fried zucchini but, hate the calories.  They usually deep fry them at restaurants and dipping sauces are usually made with high fat mayonaise.  Hubby brought home zucchini and I started thinking how can I duplicate some of my fav restaurants making it healthy and HCG safe all at the same time?

The sauce was inspired by Black Angus cucumber dipping sauce for their high fat zucchini death sticks.  Turned out tasting exactly the same!!

Fried Zucchini HCG Style

Preheat oven to 450

  • 2 large zucchini sliced into chips (thinner is crispier)
  • egg beaters
  • garlic powder
  • mrs dash lemon pepper no sugar (can also make your own with lemon rind and pepper)
  • onion powder
  • montreal steak seasoning
  • parsley flakes
  • italian seasoning
  • salt
  • 2-3 tablespoons of wheat germ

Combine all ingredients above in plastic bag set aside.

Put egg beaters in bowl with a little garlic and salt toss zucchini in mixture til covered.  Add cut up zucchini to bag and shake til zucchini is covered with seasonings.  Place zucchini single layer in oven or toaster oven and bake at 450 for 10 minutes turn over and bake another 10 minutes til golden brown.

Cucumber Sauce for dipping

  • 1 tub of fat free sour cream
  • juice of 1 lemon
  • couple dashes of Italian seasonings
  • dash of dill weed
  • 1/2-1tsp of Dijion mustard
  • 1 tsp salt
  • 2 cloves diced finely garlic
  • a few dashes of garlic powder
  • onion powder
  • 1 whole cucumber diced finely
  • Mix all ingredients and chill for 1 hour to marry spices
Use more or less of any spices above according to your taste.
